I like to find ways to get more foods that I don’t normally eat enough of.  I struggle to get in vegetables during the day, so have stolen some strategies to include more:

  1. In your eggs
    • Potatoes, tomatoes, onions, peppers, and spinach mixed with eggs for breakfast. Bonus tip: I buy the onions and peppers frozen so no need to prepare those.
  2. In a smooth
    • Spinach works well here. The taste isn’t noticeable and adds a little extra to the mixture
  3. Embrace the frozen
    • It’s been easier to cook up green beans and broccoli when we have the Costco sized bag in the freezer. Cooked in the microwave, there’s little to no preparation, they taste great with a little olive oil, salt, and pepper, and it’s easy.
